How block booking of all the tours

Hi,

Is possible to block the reserve for a specific day for all the tours in the site, after receive a booking for a tour for that specific day?
In some cases we would need to block the tours booking becouse we doen´t have guides available.
If you have some idea of how implement this case let me know.
