Disable some random dates depending on the tour

I want to disable few future dates for tour.
For example:

For TOUR 1 – I want to block few random dates from 2019
For TOUR 2 – I want to block all weekends
For TOUR 3 – I want to block all weekdays

Please guide.

If you have some code, please provide so that i will paste them in functions.php or anywhere you mention.
