Can't find options

Hi,

can’t find following (if they’re possible):

-how add stocks for each departure separately (if one trip has several departure dates);
-making booking via admin site – add not only product, but also departure date (now can choose only tour);
-partial payment;
-Destinations submenu – if I add new destination, this will be shown as submenu, too.
