How can I make exceptions in the calendar?

Hello, I need to add some days not eligible in the calendar. tThe tour goes from 21 july to 29 september, except one week of August.
I wrote in tour start date:21/06/2018 and end date: 29/09/2018 but I need to disable some days between them
